ABSTRACT A process for the preparation of an antioxidant extract of spices is disclosed. In the process, the spice is subjected to at least one extraction with a non-polar solvent (hexane), the spice thus treated is subjected to at least one extraction with a polar solvent (ethanol) and the extract obtained is concentrated and dried to obtain the spice extract. This extract is substantially odorless and neutral-tasting.
