In the process described for the preparation of betaines the tertiary starting amine is first quaternized with an .omega.-haloalkanecarboxylic acid or a salt thereof, preferably in water as solvent, at a temperature of from 60 to 98°C and at a pH of from 7 to 11, the tertiary amine compound and the haloalkanecarboxylic acid or salt thereof having been employed in a molar ratio of 1: from 1 to 1.5. The betaine solution obtained is then maintained at a pH of from 1 to 14 and at a temperature of from 95 to 170°C until no further organically bonded halogen can be detected. The finished betaine solution has the required purity with regard to starting amine and to organic halogen compound.
