In order to manufacture chocolate or a similar product with the incorporation of 3 to 20 wt.% of water, chocolate or a product similar to chocolate, if necessary tempered beforehand, and a composition containing water are introduced into an extruder in which the mixture is mixed at a controlled temperature, and the mixture is then passed through a nozzle such that the chocolate mass emerging is at a temperature of 0 to 28°C.
