The invention relates to a process for treating coffee prior to domestic or institutional brewing of a ground or roasted form of the coffee to form a beverage from the coffee to lower the acidity of the beverage made from the coffee. This process comprises treating the coffee with ammonia gas or ammonium ions wherein the degree of beverage acidity lowering is determined by a mass proportion of ammonia gas or ammonium ions to the coffee treated and recovering coffee having reduced acidity. The invention further relates to the reduced acidity coffee obtained from the invention process.

L'invention concerne un procédé de traitement du café avant son infusion, sous forme moulue ou torréfiée, chez soi ou dans un établissement, en vue de former ainsi une boisson dont l'acidité est réduite. Ce procédé consiste à traiter le café avec du gaz ammoniac ou des ions ammonium, le degré de réduction de l'acidité étant fonction du rapport entre le volume de gaz ammoniac ou d'ions ammonium et le café à traiter, et à récupérer le café à acidité réduite. L'invention porte également sur ledit café à acidité réduite obtenu selon ledit procédé.
