Le procédé de fermentation s'effectue de préférence dans des conditions très acides de pH <3 en utilisant des champignons cellulolytiques, acidophiles ou résistant aux acides ou avec une tolérance envers les acides. Dans ces conditions, on évite la contamination microbienne ou on la réduit au minimum.
