ABREGE DESCRIPTIF Dans un procédé de préparation de concentrés de microorganismes lyophilisés mettant en oeuvre une ultra- filtration avec apport en substrats nutritifs et admission d'agent neutralisant dans le fermenteur, a) on met fin aux apports de substrats en refroidissant: b) on poursuit l'ultra- filtration jusqu'à obtention d'un concentré primaire (40/80 kg poids sec bactérien/m3) et l'on refroidit à 15 - 20°C, c) on lave le concentré primaire avec des sels minéraux et des acides aminés, oligo-éléments et vitamines; d) on concentre par ultrafiltration à 90 - 220 kg poids sec bactérien/m3; e) on refroidit à 5°C et on ajoute un protecteur; f) on congèle et on lyophilise. Application notamment à la prépa- ration de bactéries lactiques.
