The present invention relates to a novel one-step process for obtaining hydroxypropylated quaternary ammonium compounds having a fatty acid ester function that is simpler, quicker and safer and does not use epihalohydrins, alkylating agents or highly toxic solvents. The hydroxypropylated quaternary ammonium compounds having a fatty acid ester function of the present invention have the following general formula(I): (see Fig. I).
