ABSTRACT A process for the preparation of isomaltulose through enzymatic transformation from sucrose with the use of microorganisms forming isomaltulose from sucrose is described. In this process, a pure sucrose solution is mixed with the mother liquor of a preceding isomaltulose crystallization, and the resulting mixture is brought into contact with dead immobilized cells of such microorganisms.
