A process for the production of pyruvic acid involving the enzymatic reaction of L-lactic acid and oxygen in an aqueous solution in the presence of catalysts glycolate oxidase ((S)2-hydroxy-acid oxidase, EC 1.1.3.15) and catalase (EC 1.11.1.6). High yields of pyruvate (e.g., 96 %) at high purity (98 % sodium salt) can be achieved at commercially acceptable concentration (typically up to0.5M) without substantial product inhibition of the enzyme.
L'invention concerne un procédé de préparation de l'acide pyruvique comprenant la réaction enzymatique de l'acide L-lactique et de l'oxygène dans une solution aqueuse en présence de catalyseurs consistant en glycolate-oxydase ((S)-2-hydroxy-acide oxydase, EC 1.1.3.15) et en catalase (EC 1.11.1.6). On peut obtenir ainsi des rendements importants (par exemple 96 %) de pyruvate ayant une pureté élevée (98 % de sel de sodium) à un niveau de concentration acceptable commercialement (généralement jusqu'à 0,5 M) sans inhibition réelle de l'enzyme de production.
