Process for producing a lumpy meat emulsion product, in which the starting materials are processed to a meat emulsion at temperatures below 55°C, in which the meat emulsion is forced through a gap between the plates of the high speed emulsifier into a process tube and rapidly heated to 40 to 75°C, the proteins contained in the starting materials largely having an animal origin and having different coagulation behaviour characteristics as regards temperature and time.

Procédé de fabrication d'une émulsion de viande en mottes, dans lequel les matières premières sont transformées en une émulsion de viande à des températures inférieures à 55 °C, ladite émulsion de viande étant ensuite acheminée sous pression à travers un espace entre les plaques d'un émulseur à grande vitesse jusqu'à l'intérieur d'un tube de transformation, puis rapidement chauffée à une température se situant entre 40 et 75 °C, les protéines que renferment les matières premières étant en grande partie d'origine carnée et ayant des caractéristiques différentes de comportement en matière de coagulation pour ce qui concerne la température et le temps de coagulation.
