Abstract A Process for the production of a milk powder To produce a whole milk powder having certain character- istics of roller-dried powders, more especially a high percentage of free fats, crystallization of the lactose is promoted by seeding a skimmed milk concentrate, adding cream which has preferably been homogenized at high temperature and spraying the mixture cold under high pressure into a drying tower where it meets a stream of very hot air. The powder obtained may be used as an ingredient in the production of sauces, desserts, ice creams and confectionery- chocolate goods.
