ABREGE Ce procédé consiste à prendre un jus végétal, obtenu par pressurage d'au moins un végétal, à régler son pH avant de le sulfiter, à le clarifier puis à le soumettre à une microfiltration sur membrane. Le jus microfiltré est soumis à une fermentation alcoolique contrôlée, sous atmosphère de gaz carbonique. Ce procédé conduit à de nouvelles boissons alcoolisées ayant des propriétés organoleptiques très agréables. Une installation de mise en oeuvre industrielle de procédé appliqué à la canne à sucre conduit à un vin de canne et à un pur esprit de canne.
