To produce sterilized evaporated whole milk with smaller additions, if any, of stabilizing additives, standard milk is subjected to partial homogenization and heat treatment before concentration by evaporation. The evaporated milk is sterilized after packing in containers or in-line before packing, in which case the containers are filled under aseptic conditions. The evaporated milk obtained keeps at ambient tempera- ture without settling, without gel formation and without separation of fats.
