ABSTRACT N-Protected L?-aspartyl-L-phenylalanine, which may be used to produce the corresponding methyl ester widely use as a sweetener, is produced in good yield in a simple procedure typically carried out in an aqueous medium by reacting N-protected-L-aspartic anhydride with L-phenylalaninate ion; still better yields are obtained by carrying out the reaction in the presence of an alkali or alkaline earth metal salt of an inorganic or organic acid.
