ABSTRACT .beta.-Pyrones of the formula Image wherein R' is alkyl and R is hydrogen, alkyl, aryl, alkenyl or aralkyl, useful as intermediates in the production of .gamma.-pyrone flavor and aroma enhancers are obtained by reaction of a compound of the formula Image with a substantially anhydrous acid of pKa 4 or below.
