ABSTRACT Epoxy pyrones of the formula Image wherein x is hydrogen, alkyl, aryl, alkenyl, aralkyl, -CH2OH or CH2O-Alkyl and R' is alkyl useful in the pro- duction of .gamma.-pyrone flavor, and aroma enhancers are obtained by treatment of .beta.-Pyrones of the formula Image in a water-containing medium with base and hydrogen peroxide.
