PROCESS FOR THE PRODUCTION OF HIGH PURITY TARTARIC ACID ABSTRACT Disodium tartrate which can be easily converted to tartaric acid is produced by hydrolysis of an epoxysuccinate. Formation of impurities is minimized and the reaction time shortened by performing the hydrolysis under superatmospheric pressure and elevated temperature at a pH in the range of from about 6 to about 11.
