The present invention relates to a process for the simultaneous production of converted and non-converted sugar and/or non-sugar products. The process is especially adapted to the simultaneous production of isomaltulose and/or trehalulose, and betaine or invert sugar from plant derived juices. Sucrose in said juices is enzymatically converted into isomaltulose and trehalulose and the target products are separately recovered from the resulting solution. The isomaltulose may be further converted into isomalt.
La présente invention concerne un procédé de production simultanée de produits de sucre convertis et non convertis et/ou de produits sans sucre. Le procédé est particulièrement adapté à la production simultanée d'isomaltulose et/ou de tréhalulose, et de bétaïne ou de sucre inverti à partir de jus dérivés de plantes. Le saccharose contenu dans lesdits jus est converti par voie enzymatique en isomaltulose et en tréhalulose et les produits cibles sont récupérés séparément de la solution résultante. On peut à nouveau convertir l'isomaltulose en isomalte.
