ABSTRACT Esters of L-aspartyl L-phenylalanine, especially of alcohols having a carbon number of not less than 2, phenol and substituted phenols are useful as sweeteners or in the production of L-aspartyl-L-phenylalanine methyl ester a well known sweetener; the esters are produced in good yield without the need for N- protecting groups by condensing L-aspartic acid and an L-phenyl- alanine ester of the defined class in the presence of a micro- organism belonging to a genus selected from the group consisting of Corynebacterium, Candida, Cryptococcus, Escherichia, Flavo- bacterium, Geotrichum, Micrococcus, Pachysolen, Saccharomyces, Tricosporon, Xanthomonas, Kluyveromyces, Endomyces, Arthrobacter, Cellulomonas and Brevibacterium, or fraction thereof.
