The invention is directed to a continuous process for the production of rice flour and dough. Rice flour and dough is made by hydrating rice flour or a blend of rice flour and other cereal components, tempering, and then cooking to partially gelatinize the starch in the flour.

L'invention concerne un procédé continu de production de farine et de pâte de riz. On produit la farine et la pâte de riz en hydratant la farine de riz ou un mélange de faire de riz et d'autres céréales, en tempérant la masse obtenue puis en cuisant cette dernière afin de gélaniniser partiellement l'amidon contenu dans la farine.
