ABSTRACT OF THE DISCLOSURE Process of producing a polysaccharide having a molecular weight higher than 200,000 and which is effective in lowering the level of cholesterol in serum and liver and the atherogenic index, which comprises culturing Bacillus polymyxa No. 271 in an aqueous culture medium containing assimilable saccharides until said polysaccharide accumulates in said medium and recovering said accumulated polysaccharide from said medium. Cationic salt can also be produced.
