Abstract A process for the production of polyunsaturated fatty acids To produce polyunsaturated fatty acids, cells of a moss selected from a group consisting of the species Eurhynchium striatum, Brachythecium rutabulum, Brachythe- cium salebrosum, Rhytidiadelphus squarrosus, Scleropodium purum and Rhytidiadelphus triquetrus are cultured and the desired compounds are extracted therefrom.
