A process for the production of soluble instant coffee in powder form by split extraction of ground roasted coffee in percolation cells to produce a first liquid extract from the atmospheric stage (1) and a second liquid extract from the pressure stage (2), the first liquid extract then being evaporated to a dry matter concentration above 35% by weight and the second liquid extract being evaporated to a dry matter concentration below 25% by weight, the two liquid extracts then being mixed, the evaporation vapours of the first liquid extract being condensed and concentrated and the concentrate obtained being reintroduced into the process for converting the mixture into soluble coffee powder. Application to the production of an instant coffee powder by split extraction.
Cette invention concerne un procédé de production de café instantané en poudre soluble par extraction compartimentée dans des cellules de percolation de café moulu torréfié d'un premier extrait liquide à la pression ambiante (1) et d'un second extrait liquide sous pression (2), le premier extrait étant soumis à un traitement d'évaporation donnant une teneur en matière sèche de plus de 35 % en poids et le second, à un traitement analogue donnant une teneur en matière sèche inférieure à 25 % en poids. Les deux extraits liquides sont ensuite mélangés, les vapeurs du premier extrait étant condensées et concentrées, et le concentré obtenu étant réintroduit dans le cycle pour transformer le mélange en poudre de café soluble. Cette invention concerne également l'application du procédé à la production de café instantané en poudre.
