A b s t r a c t For the production of water-soluble, physiologically compatible starch esters, starch is converted by acid hydrolysis or enzyme hydrolysis into a partial hydrolysate with an average molecular weight Mw in the range 10000 to 500000 Daltons, this partial hydrolysate is acylated in aqueous solution with the anhydride or halogenide of an aliphatic monocarboxylic acid with 2 to 4 carbon atoms or an aliphatic dicarboxylic acid with 3 to 6 carbon atoms or mixtures thereof and an alkalisation agent up to a molar substitution in the range 0.1 to 1.0 mol/mol. The salts are removed from the reaction mixture obtained in this way. The starch esters that can be obtained in this way are very well suited for clinical and especially for parenteral and dietary applications.
