PRECIS DE LA DIVULGATION: L'invention a pour objet un procédé de purifi- cation de l'enzyme dextrane saccharase produite par la bactérie LEUCONOSTOC MESENTEROIDES. Le procédé de l'invention consiste à ajouter au milieu de culture sur saccharose de la bactérie, qui contient l'enzyme extra cellulaire et du dextrane, une quantité de polyéther de type PEG telle que, au sein du milieu apparaissent deux phases non miscibles, qui sont alors maintenus sous agitation pour assurer un bon contact, puis la phase inférieure dextrane est séparée de la phase supérieure polyéther pour constituer une préparation enzymatique enrichie en dextrane-saccharase. L'enzyme purifiée pourra être utilisée dans les procédés de synthèse des dextranes de masses molaires spécifiques de certaines applications.
