ABSTRACT OF THE DISCLOSURE A process for the removal of sucrose from a sugar mixture, comprising: contacting an aqueous solution of a sugar mixture containing sucrose with a water-insoluble glucan produced by cultivating a bacterium of species Streptococcus salivalius on a sucrose-containing medium to effect reaction therebetween, and separating and recovering the water-insoluble glucan from the resulting reaction mixture. Sucrose is believed to be a primary cause of dental plaque and caries and thus removal from food products, such as honey, in such a manner as to avoid changes in taste and apparent sweetness is desirable. The prior art does not provide any commercially feasible means of sucrose removal.
