ABSTRACT OF THE DISCLOSURE The present invention relates to a novel process for the treatment of thermosensitive substances and in particular for the drying of said sub- stances. The invention, which involves a flash treatment, relates to a pro- cess for the treatment of thermosensitive substances by contacting the sub- stances in the form of at least two phases, according to which in at least one phase a spinning shaft flow with axial symmetry is formed and at least one second phase is introduced in accordance with the axis of said spinning shaft flow. The volume elements of the first flow relative to the volume elements of the axial phase, are given a momentum such that the phase issuing from the vortex sump-type flow brings about the pulverisation of the axial phase. This is followed by the separation of the phases obtained. The medium resulting from this contact undergoes at least one second heat treatment. The invention is applied in particular to the treatment of food-stuffs. The in- vention obviates the need to use a treatment temperature close to that of the substance to be treated and makes it possible to subject the treated product without deterioration to sudden heating above the thermosensitivity limit.
