ABSTRACT A process for the winning of xylose by the hydrolysis of residues of annuals is disclosed. The process comprises removing salts and undesired organic substances from said residues with an aqueous acid solution at an elevated temperature, acidifying said residues with an aqueous acid solution, hydrolyzing same at an elevated temperature, separating the hydrolysate from said residues, and crystallizing xylose from said hydrolysate.
