Abstract Process of alkalization of cocoa in aqueous phase The invention relates to a process for alkalizing cocoa in the aqueous phase to improve its colour, taste and dispersibility and to enable a wide range of colors to be obtained therefrom. In a first step, alkalization is carried out without evaporation of water under a pressure of from 1 to 3 atmospheres and, in a second step, the water is evaporated. The cocoa powder obtained has a pH of from 6.8 to 8.5 and the aqueous extract an optical density at 20°C of from 0.6 to 1.3.
