A B S T R A C T Emulsions of oil and water can be demulsified with quaternary ammonium cationic starches, especially starches of formula: Image in which X represents a monovalent anion and Y represents a 2-hydroxypropylene, ethylene or o-, p- or m-(.alpha.-hydroxy) ethylbenzylene group of formula (from left to right) Image ; each of R1, R2 and R3 independently represents a hydrogen atom or a hydroxyl, alkyl or substituted alkyl group or an aryl or aralkyl group, or R1 and R2, together with the nitrogen atom shown form a heterocyclic or ring group and R3 is a hydrogen atom or a methyl or ethyl group; in which the total number of carbon atoms in all of R1, R2 and R3 does not exceed 14, with the proviso that if all three of R1, R2 and R3 are different and if R3 has 4 to 11 carbon atoms, R1 represents a methyl group and R2 represents an ethyl group, "starch" represents a starch residue remaining after n hydroxyl groups thereof have reacted and n is a positive number.
