There is provided a new and useful process for the preparation of a new minced fish product. The process includes the steps of comminuting cuts of at least one species of fish, forming and freezing the comminuted cuts into at least one solidified mass, thawing the solidified mass in a salt and water solution and soaking the solidified mass in the salt and water solution for a pre-determined length of time.
