A universal process for purifying phytosterols from a wood or plant derived source comprises extracting from the source a concentrated extract comprising phytosterols and a hydrocarbon; complexing the extract so formed with a metal salt; separating the phytosterol/metal salt complex from the hydrocarbon; washing the complex with a solvent mixture comprising one or both of a hydrocarbon and a ketone; hydrolysing the washed complex so formed and finally separating the phytosterols therefrom. A novel composition comprises beta- sitosterol, campesterol, campestanol, sitostanol and optionally brassicasterol and brassicastanol.
L'invention concerne un procédé universel de purification de phytostérols à partir d'une source ligneuse ou végétale. Ce procédé consiste à extraire de la source un concentré contenant des phytostérols et un hydrocarbure, à combiner cet extrait avec un sel métallique de manière à former un complexe, à séparer ce complexe phytostérol/sel métallique de l'hydrocarbure, à laver le complexe avec un mélange solvant comprenant un hydrocarbure et/ou une cétone, à hydrolyser le complexe lavé ainsi obtenu et finalement à séparer les phytostérols. L'invention concerne également une nouvelle composition contenant du béta-sitostérol, du campestérol, du campestanol, du sitostanol and éventuellement de brassicastérol et du brassicastanol.
