Abstract of the disclosure: A processed food having eIasticity comprising a solid food and thermo-gelable .beta.-1,3-glucan distributed over the entire surface layer of said solid food. The processed food is obtained by treating a dried solid food having water absorption properties with an aqueous dispersion of thermo- gelable .beta.-1,3-glucan such that the .beta.-glucan is absorbed into the surface layer of said dried solid food, optionally freezing the resulting food, and then heating said food. Frozen processed foods are also disclosed. The frozen processed food obtained by adhering thermo-gelable .beta.-1,3- glucan or an aqueous dispersion thereof to the surface layer of a solid food and then freezing the resulting food.
