The invention relates to a process for preparing a novel anti-freezepeptide and to the peptides obtained from bacteria from an aqueous low-temperature environment, such as Marinomonas protea and a novel Pseudomonas species. These anti-freeze peptides can suitably be incorporated in frozen food products such as frozen vegetables and frozen confectionery such as ice-cream.
L'invention concerne un procédé de préparation d'un nouveau peptide antigel, les peptides obtenus à partir de bactéries provenant d'un environnement basse température aqueux, tels que Marinomonas protea, et une nouvelle espèce de Pseudomonas. Ces peptides antigel peuvent être intégrés de manière adaptée dans des produits surgelés tels que des légumes surgelés, et dans des confiseries surgelées telles que des glaces alimentaires.
