A method for producing frozen desserts comprises the steps of: producing a frozen premix package at a first site, transporting the frozen premix package in the frozen state to a different, second site, and producing a frozen dessert, using a batch freezer, or a soft-ice machine on the basis of the frozen premix package defrosted at the second site, for instance a point of sale. The premix package contains a batch of premixed pasteurized ingredients for the production of a frozen dessert, wherein the premix is in a sealed packaging, and wherein the premix is in a frozen state.
La présente invention concerne un procédé de production de desserts glacés comprenant les étapes consistant à : produire un lot de prémélange congelé sur un premier site, transporter le lot de prémélange congelé à l'état congelé jusqu'à un second site différent, et produire un dessert glacé, au moyen d'un congélateur discontinu, ou d'une machine à glace italienne à partir du lot de prémélange congelé décongelé sur le second site, par exemple sur un point de vente. Le lot de prémélange contient un ensemble d'ingrédients pasteurisés prémélangés pouvant être utilisés pour la production d'un dessert glacé, le prémélange se trouvant dans un conditionnement hermétiquement fermé et le prémélange étant à l'état congelé.
