The present invention relates to the production and use of formulations consisting of (a) 10 to 90 wt.% cellulose; (b) 5 to 60 wt.% alkalicaseinate containing as polymer consitutents (c) 5 to 85 wt.% polymer obtained from N-vinyl lactames or (d) 5 to 85 wt.% polymer obtained form 50 to 99.5 wt.% of at least one basic vinyl heterocycle with a pk a value of at least 3.8 or a mixture thereof. The present invention also relates to the use of these formulations in the treatment of biological liquids of vegetable origin in an unfermented, partially or completely fermented state for sensory stabilization of products with a view to preserving taste and color.
La présente invention concerne la préparation et l'utilisation de formulations constituées de (a) 10 à 90 % en poids de cellulose, (b) 5 à 60 % en poids d'un caséinate alcalin, qui contiennent comme constituants polymères (c) 5 à 85 % en poids d'un polymère de N-vinyllactames ou bien d) 5 à 85 % en poids d'un polymère constitué de 50 à 99,5 % en poids d'au moins un hétérocycle vinylique basique avec une valeur de pka d'au moins 3,8, ou bien un mélange de ceux-ci. L'invention concerne également l'utilisation de ces formulations pour le traitement de liquides biologiques d'origine végétale à l'état non fermenté, partiellement fermenté ou totalement fermenté, en vue de la stabilisation des produits destinée à empêcher une altération de leur couleur et de leur goût.
