ABSTRACT OF THE DISCLOSURE The present invention provides a production method for a natural red pigment characterized in that the plant of the apple or the like producing the red pigment is cultured to induce a callus which forms a red pigment, the resulting callus being cultured in liquid medium, preferably in the dark, to obtain an uniform cell dispersion, which is then cultured, preferably under blue light irradiation, the red pigment being collected from the resulting culture. Since the natural red pigment obtained in accordance with the method of the present invention is harmless to humans, it can be used as a colorant in foods, pharmaceuticals and other articles.
