ABSTRACT A sugar syrup is prepared by saccharifying a thinned starch hydrolyzate at a pH of about 4.5 to about 7 and a temperature above about 45°C with a heat-stable pul- lulanase obtained from rice, and an .alpha.-1,4 carbohydrase. The pullulanase employed is free of maltase and trans- glucosidase activities. In a preferred embodiment, a dextrose syrup is prepared by saccharifying the thinned starch hydrolyzate with glucoamylase and the rice de- branching enzyme at a pH of about 5 and at a temperature of about 55°C. A method of preparing a maltose syrup using the rice debranching enzyme is also disclosed.
