- 1 - Abstract: The present invention relates to a method of producing frozen surimi containing substantially no phosphate additives, in which carbonates and/or bicarbonates are added to dehydrated minced fish meat and kept at a pH value of less than 7.5, and the resulting surimi and surimi based products have an excellent whiteness and good elasticity (ashi).
