PRODUCTION OF MANNOHEPTONATE SALTS Abstract of the Disclosure A process for the direct conversion of an ammonium or alkali metal salt of mannose bisulfite to an ammonium or alkali metal mannoheptonate salt. The process comprises reacting the mannose bisulfite salt under alkaline conditions with a molar equivalent of an alkali metal cyanide salt and recovering the mannoheptonate salt. The reaction produces high yields of D-glycero-D-galacto heptonate salts from an inexpensive raw material.
