PRODUCTION OF MONOGLYCERIDES BY ENZYMATIC TRANSESTERIFICATION Abstract of the Disclosure A process for the production of high purity monoglycerides by lipase-catalyzed transesterifica- tion, and the products of the reaction, are des- cribed. In the method of the present invention, oils or pure triglycerides are combined with alcohol, a small amount of water and a lipase. The reaction proceeds under mild conditions, and produces high yields of .beta.-monoglyceride product.
