A recombinant bacteria for the production of exopolysaccharides is disclosed as well as a method for making the recombinant bacteria and making an exopolysaccharide from the bacteria by submerged aerobic fermentation of the bacteria utilizing a sugar substrate. In addition, the present invention provides a method of producing bacterial exopolysaccharides by fermentation from sugar substrates that the wild-type bacteria for producing the exopolysaccharide cannot utilize.

L'invention concerne une bactérie recombinée utile pour la production d'exopolysaccharides, ainsi qu'un procédé permettant de produire la bactérie recombinée et un exopolysaccharide provenant de la bactérie par fermentation aérobique immergée de la bactérie au moyen d'un substrat de sucre. De plus, la présente invention concerne un procédé permettant de produire des exopolysaccharides de bactéries, par fermentation à partir de substrats de sucre que la bactérie de type sauvage servant à produire l'exopolysaccharide ne peut pas utiliser.
