A process for producing a saccharide carboxylic acid or a salt thereof characterized in that a microorganism belonging to the genus Pseudogluconobacter and capable of oxidizing a hydroxymethyl group and/or hemiacetal hydroxyl-associated carbon atom to a carboxyl group, or an artifact derived from the microorganism, is permitted to act on a hydroxymethyl and/or hemiacetal hydroxyl-containing saccharide or saccharide derivative to produce and accumulate the corresponding carboxylic acid and the carboxylic acid so accumulated is harvested and novel saccharide carboxylic acids produced by the above production method, and by the process, from a broad range of saccharides, saccharic acids having carboxyl groups derived from hydroxymethyl and/or hemiacetal OH groups can be produced with high selectivity and in good yield, the resultant saccharide acids are resistant to enzymatic degradation and have improved water solubility, among other characteristics.

Un procédé de production d'un acide carboxylique de saccharide ou d'un de ses sels, caractérisé en ce qu'un micro-organisme appartenant au genre pseudogluconobacter et capable d'oxyder un atome de carbone du groupe hydroxyméthyle et/ou hydroxyle hémiacétal à un groupe carboxyle, ou un artefact dérivé du microorganisme, est autorisé à agir sur un saccharide contenant du hydroxyméthyle et/ou de l'hydroxyle hémiacétal ou un dérivé saccharidique, de manière à produire et à accumuler l'acide carboxylique correspondant, et l'acide carboxylique ainsi accumulé est récolté et de nouveaux acides carboxyliques de saccharide produits par le procédé de fabrication susmentionné, et par le procédé, à partir d'une large gamme de saccharides, des acides sacchariques ayant des groupes de carboxyle dérivé d'hydroxyméthyl et/ou des groupes d'hémiacétal OH peuvent être produits avec une sélectivité élevée et avec un bon rendement, les acides de saccharide sont résistants à la dégradation enzymatique et ont une meilleure solubilité dans l'eau, parmi d'autres caractéristiques.
