ABSTRACT OF THE DISCLOSURE A thermostable lactase is obtained by cultivation of a member of the genus Bacilius in a suitable nutrient medium by ctlng such a ~3r which ~xh5bit~ opt~um growth at ~ to~p- selecting such a member which exhibits optimum growth at a temp- c~ or th- coll-fr~a ~nzy~n3 ar~ us~ful for t~ hydrolysls of erature of at least about 45°C. The resulting lactase-containing cells or the cell-free enzyme are useful for the hydrolysis of lactose in a variety of substrate media.
