Thermostable proteases homologous to proteases derived from Nocardiopsis, and the production thereof by the wild-type, and in recombinant host cells including transgenic plants and non-human transgenic animals. The proteases are effective in animal feed, in particular fish feed, and detergents. The proteases are capable of degrading the soybean Bowman-Birk inhibitor, and other antinutritional factors such as soybean agglutinin and the Kunitz trypsin inhibitor, as well as the isolated soy storage proteins glycinin and beta-conglycinin. Characteristic structural features of relevance for the thermostability of these proteases of peptidase family S2A or S1E are disclosed.
L'invention a trait à des protéases thermostables, homologues à des protéases dérivées de Nocardiopsis, à leur production par le type sauvage, et à des cellules hôtes recombinées, notamment à des végétaux transgéniques et des animaux non humains transgéniques. Les protéases selon l'invention présentent une efficacité dans l'alimentation animale, en particulier dans des aliments pour poissons, et dans les détergents. Les protéases selon l'invention peuvent dégrader l'inhibiteur de Bowman-Birk du soja, et d'autres facteurs antinutritionnels tels que l'agglutinine du soja et l'inhibiteur de la trypsine de type Kunitz, ainsi que les protéines de stockage du soja isolées glycinine et béta-conglycinine. L'invention concerne également des caractéristiques structurelles pertinentes pour la thermostabilité de ces protéases de la famille des peptidases S2A ou S1E.
