ABSTRACT OF THE DISCLOSURE Fruits and vegetable tubers are protected during storage by means of a salt of a carboxylic acid and an alkyl amine. The salt is solid and inert in its initially applied form, but is activated by the heat and moisture generated by the stored produce. A specific, illustrative example of such a salt is the salt of citric acid and 2-amino butane.
