A membrane filtered soy protein isolate or concentrate can readily be blended with and hydrated by a dairy product, which is preferably liquid, such as milk and/or cream, at relatively low temperatures, e.g. below 30~C or even below 8~C. The resulting blend can then be acted upon by a yoghurt-forming microorganism to produce a yoghurt-type product, which is comparable with an all dairy yoghurt in taste and mouthfeel.

Isolat ou concentré de protéine de soja filtrée par une membrane pouvant être aisément mélangé avec un produit laitier et hydraté par ce produit, de préférence liquide, tel que du lait et/ou de la crème, à des températures relativement basses, par exemple inférieures à 30°C ou même inférieures à 8°C. Le mélange obtenu peut alors être corrigé par un microorganisme formant du yaourt pour produire un produit de type yaourt, comparable en goût et en sensation dans la bouche avec un yaourt composé entièrement de produits laitiers.
