ABSTRACT A protein-containing edible product which can but need not resemble a sausage is obtained by introducing a mass of comminuted protein-containing foodstuff (e.g., extended or non-extended meat or a mixture of two or more different meats) into the cavity of a mold so that the introduced mass assumes the shape which is imparted thereto by the surface surrounding the cavity, maintaining the mold at a temperature at which the mass of foodstuff in the cavity develops its own skin within an interval of not more than 200 seconds, and removing the mass and its skin from the mold. The removed mass can be subjected to one or more additional treatments including coloring (reddening), curing with woodsmoke, drying the skin and finishing. The temperature of the mold need not exceed 150°C.
