Protein hydrolyzates containing at least two types of peptides characterized by having been hydrolyzed at a degree of from 30 to 45%, having a number- average molecular weight of 300 or less, and having a ratio of the weight- average molecular weight to the number-average molecular weight of more than 1 but not more than 2. These protein hydrolyzates have such a low antigenicity as being applicable to those having allergic diathesis and an excellent emulsion properties. These protein hydrolyzates can be obtained by a process which comprises hydrolyzing a proteinous material to give a degree of hydrolysis of 30 to 45%, and bringing the obtained hydrolyzate into contact simultaneously or separately with two types of synthetic porous adsorbents respectively having an average pore size of from 2 to 8 mm and an average pore size of from 20 to 30 nm within a total surface area range of 300 to 3000 m2 per g of the protein hydrolyzate in terms of protein, followed by the recovery of the non-adsorbed components.

L'invention concerne des hydrolysats protéiques contenant au moins deux types de peptides caractérisés en ce qu'ils ont été hydrolysés dans une proportion comprise entre 30 et 45 %. Ces hydrolysats présentent un poids moléculaire moyen en nombre inférieur ou égal à 300, et un rapport entre le poids moléculaire moyen en poids et le poids moléculaire moyen en nombre supérieur à 1 mais inférieur à 2. Leur antigénicité est si faible qu'ils peuvent même être destinés aux personnes atteintes d'une diathèse allergique. Par ailleurs, ils possèdent d'excellentes propriétés d'émulsion. Lesdits hydrolysats protéiques s'obtiennent au moyen d'une opération consistant à hydrolyser une matière protéique et à atteindre un degré d'hydrolyse compris entre 30 et 45 %, puis à amener l'hydrolysat ainsi obtenu simultanément ou séparément au contact de deux types d'adsorbants poreux synthétiques possédant respectivement des dimensions des pores moyennes de 2 à 8 mm et de 20 à 30 nm dans une plage de zone de surface totale comprise entre 300 et 3000 m?2¿ par g de cet hydrolysat protéique en termes de protéine. L'opération consiste ensuite à récupérer les composants non adsorbés.
