The present invention provides a method for purifying cellobiose which comprises the steps of (A) preparing a cellobiose-containing sugar solution; (B) increasing the rate of cellobiose present in the sugar solution relative to the total saccharides present therein up to at least 50% by mass; and (C) crystallizing cellobiose; and a method for preparing cellobiose having a high content of the .alpha.-anomer thereof which comprises the step of drying a cellobiose- containing sugar solution having a rate of cellobiose of at least 90% by mass relative to the total saccharides present therein while maintaining the sugar solution at a temperature ranging from 80 to 95°C. These methods of the present invention permit the economical preparation of cellobiose having considerably improved purity and recovery rate, without using any complicated process. Moreover, the present invention also permits the preparation of cellobiose highly soluble in water.
Procédé de purification de cellobiose comprenant les étapes de: (A) préparation d~une solution de sucre contenant de la cellobiose; (B) ajustement de la teneur en cellobiose dans la solution de sucre contenant de la cellobiose à 50% en poids ou plus par rapport à la teneur totale en sucre; et (C) cristallisation de la cellobiose à partir de la solution; et procédé pour la production de cellobiose ayant un rapport d~anomère .alpha. élevé, le procédé comprenant l~étape de séchage d~une solution de sucre contenant de la cellobiose ayant une teneur en cellobiose de 90% en poids ou plus par rapport à la teneur totale en sucre tandis que l~on maintient la température de 80 à 95°C. Il devient possible de purifier la cellobiose à partir d~une solution de sucre contenant de la cellobiose pour un faible coût et avec une pureté et un rendement améliorés de façon spectaculaire sans devoir employer de traitements compliqués. Il devient aussi possible de produire de la cellobiose ayant une solubilité élevée dans l~eau.
